Come on Jerimie? A special servo wheel with a hall sensor, maybe? An auxiliary pot for ADC port feedback?

(Nice how I try to simplify something not so simple.)

Open the servo and solder a wire to the wiper pin of the pot (making a 4th wire)... Connect the wire to an adc port... Done, instant feedback...

Hard to find good video footage, but i hope that helps, hopefully you find a better video. Nothing worse when someone is holding a camera with one hand and shaking it around everywhere.
