How would i go about controlling a 12v dc motor? I want to control the speed and direction.

Motor controller, h-bridge circuit.
Hi RC,
I tried both the H-Bridge and ESC's. I prefer the ESC's as in the pic here:
Electronic Speed Controller
The advantage is you only need 1 port on the EZ-B. The H-Brigde is nicely documented in the video's over here. You'll need 5 ports (4 + 1 trigger).
The ESC's might need additional cooling sink in case of heavy loads. They are however internally protected.
I use both ESC's and H-Bridge in combination with these 12V motors with excellent result:
12V DC motor with gearbox
and
12V DC motor with sprocket
Good luck,
PhG
Just a small extra remark. You need 1 digital port for each ESC. The H-Bridge does 2 motors at the same time.
