I'm setting up color tracking and following a tutorial but when I go to the camera settings I cant edit the areas circled in red

Because you have multi servo enabled. Press the multi servo button and edit the servos individually. Means that robot you’re using is controlling multiple servos.

it says "Unable to save. A servo port is specified more than once. servo ports must be unique. Port: N/A".
It can't save becuase there's a servo port specified more than once. The servo ports must be unique. The servo port that is specified more than once is NA. Remove the NA servo that's specified more than once.
in the tutorial both the x and y servos are N/A

That tutorial is for movement tracking. It is not for servo tracking. It'd be best to read the tutorial rather than only looking at the photos. Use the correct tutorial, and have fun! https://synthiam.com/Community/Tutorials/112?courseId=2
