Hi,
I'm looking at using something like this for EZ-B

Will EZ-B power it?
Is there another suggestion?

Suspect you would need h-bridges for the motors. They don't specify the mperage, so more research needed. Seems awefully expensive for a bot with only 5lbs carrying capacity.

I noticed on the assembly guide that they are using a Sabre-tooth motor controller.
Another good base is Traxxas chassis, good quality, good suspension, etc. and you can find them used on local buy and sells.
